Avocado, Belgian Endive and sun-dried Tomato salad

I often buy avocados because I like it quite a lot and is full of very precious substances: Potassium, Calcium, Magnesium and Proteins.

But do not eat too much because it’s quite high in calories, about 160 for every 100 grams.

Normally I eat it with mozzarella and tomatoes, but to have something different I made this new salad and it turned out to be quite successful!

For two portioins I have used:

– 1 avocado
– 2 heads of Belgian endive
– 10 sun-dried tomatoes
– e.v.o. oil ar
– salt ar

As regards the sun-dried tomatoes you have two options:

  1. you can buy them. In this case they are way too dry to chew, so I put them in boiling-hot water for about 5 minutes. Then I drain and dab them with a cloth and only then I cut them and put them in the salad with the rest of the ingredients.
  2. you can buy fresh tomatoes and dry them in your oven. Just buy some red, ripe, tasty cherry tomatoes, cut them in two. Put the halves on a baking tray with the skin touching the tray and put them in the oven at 80 degrees celsius until let’s say half-dry. It takes me about 6 hours

Now the difficult part is done! So peel the avocado and chop it. Cut the Belgian endive and add it to the avocado. Add the tomatoes, the oil and the salt.

I normally like very simple dressings and especially with this salad I advice you do not add any more sour ingredients like vinegar or lemon because the sun-dried tomatoes are already quite sharp.
