Marzipan Pastries

The first dump sunday after summer. The crave for comfort food is hardly endurable! Then why resist? I opened my pantry and just found some almond flour! It must be a sign! 🙂

For 16 pastries:

  • 250 gr almond flour
  • 250 gr white sugar
  • 2 egg whites
  • 1 tsp vanilla extract or almond essence
  • 2 tbp water

Put the sugar in a mixer and mix for about 20 seconds. Now add all other ingredients and mix until smooth.

Done! With your hands form some apricot-size balls, you can use a sac-a-poche too, and lay them on a tray with some baking paper. You can also add candied cherries or some whole almonds.

Now bake at 180° for 16/18 minutes.

Dust with icing sugar and let cool.
