Thai Fish Stew with Coconut milk

Today I’m going to suggest one of my favourite soups. It’s delicious and extremely easy to make.

It is also very easy to adjust to your personal taste because you can swap some of the ingredients according to what you like. For example, I have used perch fillets but you can use cod or even king prawns.

If you like coriander, unlike me, you can use it instead of the parsley and lemon is perfect as a substitute for lime.

Anyway, this is my recipe and it’s gorgeous!

Ingredients for 2 people:

  • 1 finely chopped onion
  • 250 ml vegetable stock
  • 375 ml coconut milk
  • 1 tbs sugar
  • grated lime zest
  • fresh chilly to taste
  • 400 gr perch fillets in cubes
  • 1 tbs lime juice
  • 1/2 tbs salt
  • finely chopped flat parsley

Put everything, except the fish and the parsley, in a sauce-pan.

Bring to the boil and simmer for 15 minutes.

Add the fish and simmer for 10/15 minutes. Now remove the fish and simmer for a few more minutes until the sauce thickens, 10 minutes should be enough.

Now serve with some finely chopped parsley and some boiled rice.
