I really invite you to try this recipe, it’s gorgeous! …nothing else to say 🙂
For 4 people:
– 350 gr wholewheat short pasta
– 2 large leeks
– 30 walnuts
– 30gr mixed dried mushrooms
– 200ml single cream (you can use any kind of vegetable cream if you prefer)
– evo oil
– black pepper
First of all soak the mushrooms in warm water. After 10 minutes squeeze and chop them. Keep the water.
Thinly slice the leeks and lightly fry them in evo oil together with the mushrooms.
Now filter the water of the mushrooms with a small colander and add it to the pan, add some salt.
Cook for few minutes, until the leeks have softened and add the cream.
Turn the heat off.
When the pasta is ready mix it with the sauce. If it’s too thick you can add a bit of warm milk. Sautè for a couple of minutes. Add the walnuts and a nice twist of clack pepper.
