Whole-wheat pasta with red peppers and Seitan sauce

Ingredients for 2/3 persons:

– 1 red pepper
– 1 medium size onion
– 6/7 cherry tomatoes
– 150 gr Seitan
– e.v.o. oil ar
– salt ar
– water ar

It’s really simple: finely chop the oinion, you can use a blender, and put it in a saucepan with some oil and a pinch of salt. Clean and chop the pepper, remove all seeds and blend it too. Add it to the onion. Now blend the tomatoes as well add add to the rest.

Do the same with the seitan, which you can either buy or make.

Now add the seitan to the rest of the ingredients with a bit of water (about 1/4 cup) and let it simmer with a lid for 20/30 minutes.

Cook the pasta then mix it with the sauce. I prefer whole-wheat pasta but you can use regular pasta too.

If you are not vegan or have any problem with milk I strongly advice to add some grated Pecorino cheese and serve
