Orecchiette, Broccoli & Mozzarella

So easy and yet so good! You can use “orecchiette” or any other pasta of your choice as long as it’s short.

Ingredients for two people:

  • Half  broccoli (I have used the Romanesco kind but you can use any kind you like)
  • 1 mozzarella
  • 3 garlic cloves
  • chilly ar
  • evo oil ar
  • parmigiano cheese ar

First cut the mozzarella in cubes about 2×2 cm and let it to drain in a strainer for about an hour.

In the meantime clean the broccoli and cut it into snall pieces, do not worry if it crumbles.

In a pain put some oil, the garlic cloves and the chilly and  warm it up, be careful not to burn the garlic, when it’s golden you should throw it away. Add the broccoli, turn the heat down, cover it and let it cook. You can add a bit of water if you see it’s too dry. Stir from time to time, it should take about 20 minutes.

Now cook your pasta in salted water, when it’s almost done, drain it and add it to the broccoli with about a cup of the pasta cooking water. When the water has dried up you can put the fire out and add the mozzarella cubes.

Mix and serve with plenty of Parmesan cheese immediately ’cause the mozzarella tends to clump up.
