I usually do not know what to do with herrings but my husband came up with this recipe and it was so good I decided it deserved a post in this blog.
Here is how he made it.
Ingredients for 4 servings:
– 100 gr smoked herrings
– 400 gr potatoes
– 50 gr shallots
– 4 hard-boiled eggs
– 125 gr white yogurt
– fresh ginger
– fresh thyme
– 1 glass of milk
– salt, pepper and e.v.o. oil ar
Cut the herring into strips and let it soak in milk for an hour.
Peel the potatoes, cut them into medium-sized cubes and boil them.
Now grate the ginger into the yogurt, add a tablespoon of e.v.o. oil and mix well.
Chop the shallot and the eggs, add the boiled potatoes and some fresh thyme. Drain the herrings and add them. Add two tablespoons of e.v.o. oil and some salt.
Now add the yogurt and ginger sauce and a twist of black pepper.
