Onion Soup

For 4 people:

– 3 large onions
– 30 gr butter
– 20 gr flour
– 1/2 lt vegetable stock
– 100 ml dry white wine
– salt and pepper
– 2 slices of bread
– 100 gr grated Swiss Cheese (or Gruyere)
– 1 tablespoon Worcester sauce

First, cut the slices of bread into cubes, about 3 by 3. Shallow-fry them with some oil and a bit of salt. When golden brown turn the heat off and get rid of the excessive oil with some kitchen paper, keep it aside.

Now chop the onions very finely and stir-fry in the butter for a couple of minutes. If you do not eat butter you can d the same procedure with evo oil.  Add a bit of salt, some black pepper, two tablespoons of water and 1 of Worcester Sauce. When the onions have become golden, add the flour and stir for 5 minutes.

Mix the vegetable stock with the wine and add it to the onions. Bring it to the boil and let it simmer for about 20 minutes.

Now set the grill to the highest heat. Pour the soup into the serving bowls, cover with the fried bread cubes you’ve kept aside, cover with a lot of grated Swiss cheese and shove them under the grill.

When the cheese has melted and is a bit brown, turn the oven off and serve.
