Fried Rice with Prawns

The fried rice is a traditional Chinese dish, like all traditional dishes there is not ONE recipe because people use to make it with whatever left to eat. We can say the only compulsory ingredients are rice and soy sauce.

Here is how I make it with prawns.

For 2/3 portions:

  • 250 gr long grain white rice
  • 150 gr frozen prawns
  • 3 spring onions
  • 2 carrots
  • 2 eggs
  • 50 gr defrosted green peas
  • 4 tablespoons soy sauce

First af all rinse the rice under cold running water, then boil it in abundant salted water. When it’s tender, drain it and keep it aside.

In a bowl, whisk the eggs with a pinch of salt and, if you want, a spoonful of soy sauce.

Now put your Wok on the heat, when it’s hot add 1 tablespoon of vegetable oil and swirl to coat all sides of the Wok.

Now add the eggs, stir it and brake it with a spatula until the eggs are cooked and in fairly small pieces. Keep it aside.
Another way to prepare the eggs is to make them into a sort of crepe, when it’s done and cooled, just cut into fine strips.

Prepare the vegetables: clean the spring onions and cut them into rings, peel the carrots and cut them into small pieces.

Without washing it, put the Wok back on high heat and add 5/6 tablespoons of vegetable oil, add the spring onions, the carrots and the green peas. Stir-fry well mixing with a spatula.

After 2/3 minutes add the frozen prawns and stir-fry until cooked. Now add the rice (don’t forget to fluff it) and keep stirring with a spatula. After a couple of minutes add the soy sauce and keep stirring.

Turn the heat off, add the eggs and serve.

You can make this recipe with cooked ham as well following the same procedure… 🙂
